Scallop Salad

Day boat scallops (Kate's, by way of MA), Arugula (Urban Growth Farms), Mintua (or something like that, from Muddy Fork), Cilantro (Snake Hill), and local Strawberries.

Seared scallops and greens dressed with olive oil, sherry vinegar, salt, and pepper. I'm feeling the herb salad. Lots of sweet--scallops and berries--and lots of slightly bitter greens. Like early summer on a plate.

  1. GREAT picture. I am off arugula right now, but I do love it.

  2. Thanks MM. After a starch filled winter I'm loving any greens I can get my hands on.

Would a brown butter vinagarete work well, too?

I'd probably pair with an Elliot Ness or wine spritzer
