Using Eggplant

Split eggplants, tomatoes, and a bit of pepper got coated in olive oil, seasoned with salt and pepper, and thrown under the broiler. After everything was charred, the eggplant was peeled and the mix got thrown into the food processor with a little cumin, coriander, fresh parsley, and a little more olive oil. Also a bit more salt and pepper.

With toasted pita, a nice light meal. And it uses up some of that eggplant.
