Sockeye Salmon belly (Kate's), pancetta (Tea Hills pork), West Clinton greens (thanks Frannie & Mark), and a mustardy tarragon mayo. Not a bad lunch.

Some people like maple syrup, I like jelly.
Please extend my thanks to Frannie & Marks. The greens they gave me worked really well as a salad dressed with a preserved lemon / anchovy concoction I put together.
Somehow I knew that this would not be an ordinary sandwich :)
