Oysters de Slim Helú

Like Oysters Rockefeller, only Mexican.

It's just shucked oysters with some of their juices topped with a mixture of butter, bread crumbs, lime juice, Tapatio, a little salt, pepper, and cilantro briefly broiled and then topped with some more fresh cilantro. Broiling lasts about 1.5 min. And not having rock salt on hand to keep the oysters in place (and not wanting to use my cache of dried beans as a substitute as people around here have been known to do), I found out that the ridges on a grill pan or griddle do the job just as nicely. Good to know.

From here on out, if I'm going to cook an oyster, and it's not going to be fried (like this place's good ones) for a po' boy, this is how it's going to be.
